If you wait too long and the squash get too big, the seeds will be large, tough and hard to eat and the flesh won’t be quite as tender. Large summer squash are still edible and taste almost as good as young squash. But because of the texture of the flesh and seeds, more mature squash are less desirable.

Can you eat big summer squash?
Summer squash are a little different. The seeds and skin are soft and fully edible. They are sometimes referred to as “soft shell squash” and as such, can be cooked or eaten raw. The entire squash is edible, versus the winter squash’s hard seeds and shell that needs to be removed.
How big should you let squash grow?

If you let it grow much longer, the fruit will lose its flavor and the rind will become tougher. With straightneck and crookneck squash, 4–5 inches is generally as long as they should be allowed to grow before they are picked. Pattypan should be 3–5 inches in diameter. Never pull on a fruit.

Peel or cut away any damaged flesh and serve as usual. Slightly overripe squash are best served cooked, in a sauce or a stew for example. Zucchini and most types of squash can fairly easily be peeled. Try to keep zucchini dry while it is being stored.
What can I do with overripe squash?
If they really get out of hand (baseball bat size), just compost them – they have little flavour and a mealy texture.

When harvesting winter squash, look for these five signs that the time is right:
- The ‘days to maturity’ listed on the seed packet has passed.
- It’s been at least 50 to 55 days since fruit set.
- The rind has turned the mature color.
- The rind is hard and the fruit sounds hollow when gently tapped.
- Before the first frost.

Tough skin on zucchini is usually a cultural problem. Ensure plants are properly spaced to allow for adequate growth. Maintain consistent watering – especially when the fruit is developing – with 2.5 to 5 cm (1 to 2 in.) of water per week soaked into the soil at least 15 to 20 cm (6 to 8 in.)

The most common symptoms associated with toxic squash syndrome include diarrhea, vomiting, and abdominal pain. In extreme cases, toxic squash syndrome has caused swelling in the liver, gallbladder, kidney, and pancreas.
