Does Smoked Herring Need To Be Cooked?

Unlike salt fish, it is not necessary to soak smoked herring fillets overnight to loosen up the fish and remove the salt. A quick, rapid boil for 5 to 10 minutes does the trick. Once boiled, the fish is drained and then prepared according to the desired recipe.

Can you eat raw smoked kippers?

The slow, cool smoking cures the fish, so they will keep for a week or so, but it doesn’t cook them. You can eat them raw, as Hugh suggests above, but they are more often cooked by poaching, grilling or ‘jugging’ (immersing in a jug of boiling water for 10 minutes or so).
